I know it’s been a while since I posted. Well, for starters, school is hectic. And in addition to that, it was a terrible week for my country Kenya and I was not in a state of mind to post. I wrote a poem inspired by the Nairobi Westgate Mall terrorist attack and I will share it on here some time this week ( I hope). Please continue to remember all those affected by the tragic event.
Well, on a happier note, I woke up inspired to bake this morning. I have this box of oat bran cereal that I have only eaten once. It’s one of those that you actually have to cook, not instant. Aint nobody got time for that. What better way to use it than in making some nice oat bran cookies? Genius eh? đ
I got the recipe from madebymichelle.com but I altered it a bit to include less sugar and also reduce the wheat flour. You can check out the original recipe here. I halved her original recipe (hence the weird decimals, LOL) to get the following:
INGREDIENTS
- 0.375 cup canola oil
- 0.5 cup brown sugar (She also had an additional 0.5cup granulated sugar, I didn’t)
- 1 large egg
- 1 teaspoon vanilla extract
- 1.5 cups oat bran porridge cereal (she had 0.75 cup rolled oats and 0.75 cup oat bran here)
- 0.5 cup whole wheat bran flour (She had plain whole wheat flour instead)
- 0.25 teaspoon salt
- 0.25 teaspoon baking soda
- 0.5 cup dark or bittersweet chocolate chips
Preheat oven to 180 degrees celcius. Beat oil, sugar, eggs, and vanilla. Add oats, oat bran, flour, salt, and soda. Stir to blend well. Add chocolate chips. Stir to blend evenly. Drop by tablespoons onto cookie sheet. Bake 12 to 15 minutes. The cookies should not brown much. Remove to rack for cooling.Â
The cookies really are yummy. And healthier than your average cookies too. They were also extremely easy to make. Do try them out sometime. And please show me to any cool healthy recipes in the comment section. đ
