Hoping that the warm holiday spirit is upon you all.
For Christmas lunch yesterday, my sister and I designed a 3 course menu, with cream of potato soup being the starter. The soup was my brain child, 100%. I referred to no recipes and it was such a success. We didn’t have cream, but whole milk did the trick.
NEED: 1 small onion (diced), half a cup of mushrooms (chopped), 1/2 tsp margarine/ butter, 5 Potatoes, 200ml water, 400ml whole milk, 1/2 tbsp dried thyme, 1/4 tsp black pepper, salt (to taste).
DO:
- Boil potatoes till very soft (like for mash) and blend potatoes in kitchen blender. Add milk and water and blend till creamy.
- Add butter/ margarine, onions and mushrooms to a medium size saucepan and fry over a high heat till brown. Add in the creamy mixture from blender, pepper, thyme and salt to taste.
- Turn down the heat and let the soup simmer for about 5 minutes.
Serve in soup bowls and garnish with parsley or coriander leaves!
Serves 4.
I’ll have to try this, it sounds delicious! Allow me to share a tip with you that has elevated my soup making skills, sweat the onions instead of sautéing them.
